Asian Style Steamed Wild Salmon on Greens

INGREDIENTS
- 8 oz. - Wild Salmon filets, boned and cut into 3-4 oz. portions
- ¼ inch piece Fresh ginger- peeled and grated, fine
- 2 each - Garlic cloves, peeled and minced fine
- 2 Tbsp. - Tamari- (naturally fermented soy sauce)
- 2 Tbsp. - Water or fish stock
- 2-3 drops - Toasted sesame oil
- 6 leaves - Swiss chard, bok choy or several handfuls of baby cooking greens such as arugula or spinach.
Tip: This is wonderful served on top of some steamed brown rice.
METHOD
- In a small bowl or glass container mix grated ginger, garlic, tamari, water and sesame oil and place wild salmon filets in. Toss salmon with marinade and let sit for @ 10 minutes.
- Place steamer basket in pot over 1-2” of water. Make sure the water is not touching the basket.
- Place greens on bottom of steamer basket- (if using loose greens, push down gently with hands to pack greens in).
- Place marinated fish on top of the greens, spreading pieces out so they don’t overlap.
- Pour any remaining marinade over fish and greens.
- Bring water to a boil, cover with tight fitting lid and steam for 12-15 minutes or until fish is fork tender. (time will depend on how thick the fish is).
- Serve fish and greens topped with toasted sesame seeds and fresh cilantro.
