Wilted Salad with Mango Citrus Dressing

INGREDIENTS
- 1/4#- vitamin greens or baby spinach
- 1/4#- baby kale (or a mixture of your favorite greens)
- 4 Tbsp. olive oil
- 4 Tbsp. mango juice
- 4 Tbsp. apple cider vinegar
- pinch sea salt
- 1 Tbsp.- thyme leaf, fresh, chopped
- 1 Tbsp.- shallots, minced
- 1 each- ripe mango, peeled and cut into small dice
- 1/2 cup- walnuts toasted
- Wash greens, dry, remove any large stems and cut into bite sized pieces. Place cleaned greens into a large bowl and set aside.
- Heat medium sized saute pan, add olive oil, shallots, thyme and pinch of sea salt, saute until shallots are just softened- do not brown.
- Combine mango juice and apple cider vinegar; add mixture to saute pan, bring to a boil and reduce until it begins to thicken and get syrupy.
- Quickly remove dressing from stove, pour dressing over salad greens and toss to combine thoroughly. The greens will wilt slightly. Taste and adjust seasonings as necessary. Garnish salad with fresh mango and toasted walnuts.
