Citrus Sweet Potato Puffs

INGREDIENTS
- 2#-Baked sweet potatoes or yams, removed from the skin and mashed
- 1/3 cup - Mango or orange juice
- 1 ea.- Large egg, organic or free range
- 1 Tbsp- Orange zest
- 1/2 tsp- Cinnamon
- 1/4 tsp- Cardamom powder
- 1 Tbsp- Olive Oil
- Sea salt to taste

- Optional:
- 1/2 Cup- Toasted ground hazelnuts
METHOD
- Preheat oven to 375 degrees
- Place mashed sweet potatoes, juice, egg, zest, spices, olive oil and salt in a food processor
- Blend sweet potato mixture in processor until smooth
- Lightly oil a baking sheet with a little olive oil to prevent sticking
- Place sweet potato mixture into a pastry bag with a large star tip
- Pipe a small amount of mixture onto the baking sheet to make little decorative mounds
- Sprinkle top of sweet potato with ground hazelnuts if desired
- Bake for about 25 minutes or until hot and lightly browned
- These can be made ahead of time and reheated
