Citrus Sweet Potato Puffs

Prep Time: 40 minutes Cook time: 25 minutes Serves: 6 to 8

INGREDIENTS

  • 2#-Baked sweet potatoes or yams, removed from the skin and mashed
  • 1/3 cup - Mango or orange juice
  • 1 ea.- Large egg, organic or free range
  • 1 Tbsp- Orange zest
  • 1/2 tsp- Cinnamon
  • 1/4 tsp- Cardamom powder
  • 1 Tbsp- Olive Oil
  • Sea salt to taste
  • Optional:
  • 1/2 Cup- Toasted ground hazelnuts

METHOD

  • Preheat oven to 375 degrees
  • Place mashed sweet potatoes, juice, egg, zest, spices, olive oil and salt in a food processor
  • Blend sweet potato mixture in processor until smooth
  • Lightly oil a baking sheet with a little olive oil to prevent sticking
  • Place sweet potato mixture into a pastry bag with a large star tip
  • Pipe a small amount of mixture onto the baking sheet to make little decorative mounds
  • Sprinkle top of sweet potato with ground hazelnuts if desired
  • Bake for about 25 minutes or until hot and lightly browned
  • These can be made ahead of time and reheated
