Refreshing Spring Slaw

6-8 generous portions
INGREDIENTS
- 6 oz. mixed baby greens, spinach or arugula
- 3 each- carrots, scrubbed and grated
- 1 bunch- spring radishes, washed, scrubbed and julienned into small matchstick pieces
- 1/4 cup- red onion, finely minced or 1/2 bunch scallions,chopped
- 1/2 bunch- cilantro, fresh, washed, chopped- (stems & leaves)
- 1/2 package- fresh green sprouts, try pea sprouts a wonderful spring time treat.
- Juice from 1 lemon
- equal amount of extra virgin cold pressed olive oil
- 2 cloves- garlic, peeled and pressed with garlic press
- Sea salt & pepper
Clean and prep all of the ingredients in order and place in a large, beautiful serving bowl, layering them as you go.
In a seperater bowl or a small jar with a lid place lemon juice, olive oil, garlic, salt and pepper. Close jar and shake to mix.
When ready to serve, pour dressing over salad mix and toss! Enjoy
