Strawberry Salad Bowl

Prep Time: 10-15 minutes Cook time: 0 Serves: 6

INGREDIENTS

  • 6 oz. - Mixed seasonal salad greens: leaf lettuce, spinach, arugula, baby greens, etc., washed and spun dry.
  • 1-1/2 cups - Fresh strawberries, cleaned and sliced
  • 1 cup - Almonds, chopped or sliced and toasted.
  • 2/3 cup - Olive oil
  • 4 Tbsp - Raw honey
  • 1/3 cup - Orange juice, fresh
  • 3 Tbsp. - Fresh lemon juice
  • ½ tsp. - Sea salt
  • 1 Tbsp. - Poppy seeds- (optional)
  • 1 tsp. - Dijon mustard

Recipe Hint: A little crumble of fresh goat’s cheese is a nice addition to this salad.

METHOD

  • Combine lettuce and strawberries in a serving bowl.
  • Place Olive oil, honey, orange juice, lemon juice, sea salt, poppy seeds (if using) and Dijon in a jar.
  • Place lid securely on jar and shake to combine, taste and reseason as necessary.
  • When ready to serve combine dressing with greens and strawberries- toss.
  • Divide salad evenly between 6 salad plates and garnish with toasted almonds
