Ingredients

  • 2 cups- Almond milk, unsweetened
  • 1 cup- cranberry apple sauce, unsweetened
  • 3 Tablespoons- maple syrup, honey or xylitol
  • 1 cup- apple, grated
  • 1/2 cup- chia seeds, white
  • 2 Teaspoon- cinnamon, ground
  • pinch- nutmeg
  • pinch- salt
  • 1 Tablespoon- vanilla extract
  • 1/4 cup- slivered almonds, toasted
  • 1/2 cup- Apple chips

Optional:

  • ground cinnamon to sprinkle on top

Method

  1. In a large bowl mix together almond milk, cranberry sauce, maple syrup, apple, chia seeds, cinnamon, nutmeg, salt and vanilla extract until thoroughly combined.  Cover bowl and let rest for 1/2 hour until chia seeds are plumped and mixture is thickened.
  2. Spoon chia pudding into small pint sized jars or glasses sprinkle toasted almonds in between layers of pudding.  Top chia pudding with  dried apple chips  and a sprinkle of cinnamon.
  3. Chill pudding and serve.

Variations

Set up chia pudding in small pint sized jars and cover with a lid, store in your refrigerator until ready to use.  Add crunchy apple chips right before using so they stay crisp.

Omit sweetener if desired.

Substitute toasted slivered almonds for toasted walnuts or hazelnuts.

Add additional fruit juice sweetened cranberries to pudding.
