Date and Coconut Bon-Bon's

Prep Time: 30 minutes Cook time: o Serves: many

INGREDIENTS

  • 3/4 cup- dates, pitted and cut into small pieces
  • 3/4 cup- raisins
  • 1/2 cup- walnuts or pecans, chopped
  • 1/2 cup- coconut, dry, shredded
  • @1-2 Tbsp.- lemon juice, fresh
  • 1/4 tsp- cinnamon, ground
  • Optional- carob or cocoa powder

METHOD

-Place all ingredients in a food processor fitted with and "s" blade.  Process the mixture until it holds togethers, turning it off and scraping down as necessary.

- Scrape the mixture into a bowl.  The mixture should hold together and still have some texture to it.

- Roll the mixture into small balls about the size of a quarter.  If the mixture is sticky put the bowl in the refrigerator and let chill for awhile until it is easier to handle.

-Roll balls into assorted toppings to coat; toasted coconut, carob or cocoa powder, ground walnuts or sesame seeds.

-Place the balls on parchement or waxed paper lined pan and chill in the refrigerator until ready to serve.  These also freeze very well.  I like to put the bon bon's in small paper candy cups.
