Cucumbers with 96% water content are a great hydrating ingredient for this easy to prepare summer soup.  Serve this soup chilled as is or top with slice cucumbers and chopped herbs, grilled shrimp, crab meat or diced avocado.

Ingredients

  • 3 each  Cucumber, trimmed, cut into chunks,  (peel cucumbers if the skin is tough or bitter)
  • 2 each  Celery stalks, including leaves, cut into pieces
  • 1 handful  Summer spinach leaves, washed,  or baby spinach
  • 1 lime  Juiced
  • 1 cup  Coconut milk
  • 1 handful  Fresh herbs; chives, basil & mint
  • 1/2 teaspoon  Natural Salt
  1. Place cucumber, celery, summer spinach, lime juice, coconut milk, fresh herbs and salt into a high speed blender.  Place lid on blender and blend until smooth and creamy.
  2. Taste and adjust seasonings as needed.
  3. Chill and serve, perfect as a light first course

Chefs tips

  • omit summer spinach and add more cucumber
  • Substitute coconut water for coconut milk for a soup that is lighter and less creamy.
