kaledorf Salad

INGREDIENTS
- 1 large bunch-Kale, remove large stems and chop leaves into very small pieces
- 1 stalk- celery, small dice
- 2 each- carrots, large, peeled and grated
- 1 each- apple, washed, small dice
- 1/2 cup- raisins
- 3/4 cup- walnuts, toasted, chopped
- 2 Tbsp.- olive oil
- 2 Tbps.- lemon juice, fresh squeezed
- 1/2 tsp.- sea salt
- a splash- umeboshi vinegar
- Wash, trim and slice kale into small pieces. If you are using early spring kale you can just trim off the end of the stem and use the whole thing.
- Place kale in a large bowl
- Pour lemon juice, olive oil and sea salt over kale.
- Toss dressing with kale and gently rub dressing into the kale to wilt & soften kale.
- Add Celery, carrots, apples, raisins and walnuts to kale and toss to combine.
- Garnish with extra apple slices.
