kaledorf Salad

Prep Time: 20 minutes Cook time: 0 Serves: 4-6 as side dish

INGREDIENTS

  • 1 large bunch-Kale, remove large stems and chop leaves into very small pieces
  • 1 stalk- celery, small dice
  • 2 each- carrots, large, peeled and grated
  • 1 each- apple, washed, small dice
  • 1/2 cup- raisins
  • 3/4 cup- walnuts, toasted, chopped
  • 2 Tbsp.- olive oil
  • 2 Tbps.- lemon juice, fresh squeezed
  • 1/2 tsp.- sea salt
  • a splash- umeboshi vinegar
  • Wash, trim and slice kale into small pieces.  If you are using early spring kale you can just trim off the end of the stem and use the whole thing.
  • Place kale in a large bowl
  • Pour lemon juice, olive oil and sea salt over kale.
  • Toss dressing with kale and gently rub dressing into the kale to wilt & soften kale.
  • Add Celery, carrots, apples, raisins and walnuts to kale and toss to combine.
  • Garnish with extra apple slices.
