Day # 8 of the LOCAVORE CHALLENGE! and what a challenging month so far with intense weather conditions, rain, rain and more rain. For many of us it's an inconvenience, getting around and road closures. Many local farmers, buisness & home ownersI though have had to deal with more serious concerns, loss of crops, floading and damage of buildings, soil conditions that prevent replanting, rotting and the list goes on. Take today to join the locavore challenge, (they are accepting new people every day so it's not too late) and plan a a locavore meal or a locavore dish around what is available in your area.
Yesterday I put together a sweet and savory salad mix with 3 of my favorite end of summer ingredients; local corn, local tomato and local string beans. I am serving it as a salad with a light dressing but it also works quite nicely as a warm side dish or entree- (serve it on a bed of sauteed swiss chard or kale) on those cooler days we've been having.
