These yummy little treats are easy to make, the perfect little sweet treat with a surprise inside.   Bliss bites travel well and are a nice dessert option as is or with additional fruit and berries.

Ingredients

  • 1 cup- Cashews, raw, soaked in water for (2-4 hours and drained)
  • 1-1/2 cups- Shredded coconut, dry, unsweetened
  • 2 Tablespoons- Almond butter, smooth
  • Zest of 1/2 lemon
  • Zest of 1/2 lime or orange
  • 1 teaspoon- lemon extract
  • 1/2 teaspoon- Vanilla extract
  • 2 Tablespoons- raw honey  or substitute for sweetener of your choice
  • Fresh Blueberries or raspberries
  • Extra shredded coconut to roll bliss bites inMethod
  1. Drain soaked cashews and place in bowl of food processor fitter with an S blade.
  2. Add shredded coconut, almond butter, lemon, lime zest, lemon extract, vanilla extract and honey.
  3. Process ingredients until the mixture is combined , but it still has a nice texture.
  4. Remove mixture from bowl of food processor and shape mixture into small balls, make a small indent in each ball and press blueberry into middle.  Pinch dough around blueberry to cover and roll back into shape.
  5. Roll each bite into shredded coconut.  Place bliss bites on clean plate , cover and refrigerate for several hours until firm.
  6. Server bliss bites as is or on a platter with additional fruit and berries.
