Sometimes you want a little sweet treat but want to avoid the added refined sugars, preservatives, and additives.  These tasty little whole-food ingredient bites are just that.

Enjoy these for an after work out snack or dessert nibble.  Packed with a good source of protein, fats and just enough sweetness to curb those cravings & leave you feeling well nourished.  Raw coconut butter, (I like Dastony brand) adds a delicious creaminess.

Cranberry Coconut Bites

Ingredients

  • 1 cup dried cranberries organic and fruit juice sweetened
  • 1/2 cup rolled oats not instant, or substitute for more coconut flakes
  • 1-1/2 cups coconut flakes unsweetened
  • 1/3 cup raw cacao powder
  • 1 teaspoon Vanilla extract
  • 1/2 teaspoon natural salt
  • 2 Tablespoons Raw honey or substitute for maple syrup
  • 1/3 Cup coconut butter or substitute for sunflower or almond butter
  • 1/2 cup raw cacao nibs

Instructions

  1. Place cranberries and oats in food processor fitted with metal S shaped blade. Pulse until coarsely ground. Add coconut flakes, raw cacao, vanilla extract, salt, honey, coconut butter and pulse to combine, until the mixture comes together. If the cranberries or coconut butter are very dry you may need to add a tablespoon or more of warm water. Place mixture in a bowl and fold in cacao nibs. Consistency should be slightly sticky and easily form into balls. Roll mixture into small walnut sized balls, (or larger depending on how you like them). If the mixture is sticking to your hands, lightly moisten hands with water. Serve as is or sprinkle with cacao powder. Store in a covered container in the refrigerator.
