Roasting is a delicious way to prepare many vegetables.  Roasted vegetables get a little caramelized and crispy and develop deeply flavorful nuances.  But have you ever tried roasted cabbage?

Roasted cabbage is my new favorite!  I love the crispy exterior paired with sweet and soft interior.  Season the cabbage and serve it on a bed of sweet local apple and leeks.  Pair this simple side dish with sweet potato pancakes, your favorite vegetable burger or roasted chicken.

Crispy Oven Roasted Cabbage

Ingredients

  • 1 head cabbage green
  • coconut oil or olive oil spray
  • 1 teaspoon cumin ground
  • 1 /2 teaspoon salt
  • 1/2 teaspoon smoked paprika
  • 2 each Apples washed, core removed and diced
  • 2 each leeks white parts, thinly sliced
  • 1 clove garlic minced
  • 1/2 cup water
  • 2 Tablespoon Apple cider vinegar
  • 1/4 cup fresh ground pepper chopped
  • 2 Tablespoons coconut or avocado oil

Instructions

  1. Preheat oven to 400 degrees. Trim cabbage, cut in 1/2 through the core, leaving core intact and cut each cabbage half into 4 wedges. Cut through the core so each wedge holds together. Place cabbage wedges on a sheet pan, covered with parchment paper. Spray cabbage lightly with oil spray to coat. Combine cumin, salt and smoked paprika and sprinkle over cabbage wedges. Bake cabbage for 45-60 minutes until it is crispy on outside and soft inside. Timing will depend on how big cabbage pieces are and how soft you like them.
  2. While cabbage is roasting, heat medium sized saute pan over medium heat. Add coconut oil , leeks and garlic to pan, saute for 6-8 minutes until leeks begin to soften. Add apples to pan, stir and continue to cook for 3-4 minutes or until apples begin to stick slightly and brown a little. Deglaze pan with apple cider vinegar and stir. Add water, cover pan and turn heat to simmer. Cook for 10-15 minutes until apples and leeks are softened and tender. Taste and add pinch or two of salt and fresh parsley.
  3. When cabbage is roasted remove from oven. To serve place apple, leek saute on the bottom of a serving dish and place roasted cabbage wedges on top. Serve warm or at room temperature.

Recipe Notes

If you like your cabbage a little spicy add a pinch or two of cayenne pepper to your seasoning mix to sprinkle over the cabbage.  Substitute fresh parsley for minced fresh dill or chives to add to apples.
