Hemp seeds are something I eat several times a week.  Besides being a rich source of Omega 3’s , a whole food source of protein and minerals, they are tasty.  I love the nutty flavor and ease of use.

These little seeds  are so easy to add to your favorite smoothie or sprinkle on top of your morning cereal or salad bowl.  Ready to try something a little more creative?  This salad comes together quickly and is a fast and delicious lunch or dinner.  Try it and let me know what you think.

Hemp Seed & Cucumber Salad

Ingredients

  • 1 cup hemp seeds raw shelled, organic
  • 2 cups radish trimmed ends and cut into 1/4's
  • 1/4 cup chives or scallions minced
  • 2 medium cucumbers cut into small dice
  • 1 handful cilantro leaves chopped
  • 1/4 cup lime juice fresh
  • 1/4 cup olive oil
  • 1/2 teaspoon nattural salt or to taste
  • 2 stalks Celery small dice
  • 1 head bibb lettuce trimmed and washed

Instructions

  1. Place hemp seeds, radish, chives, cucumber, cilantro, lime juice, olive oil, salt and celery in a medium sized mixing bowl. Stir to combine, taste and add any additional seasonings as desired. serve a scoop of hemp seed salad on top of bibb lettuce or over your choice of salad greens, drizzle with a little additional olive oil.
