Watermelon & Cucumber Salad

an easy to make sweet & hydrating summer salad. Enjoy this salad on it's own, as a side dish, served inside lettuce cups or to accompany your favorite grilled veggie burgers.

Ingredients

  • 4 cups watermelon, very ripe, peeled and cut into medium dice
  • 2 cups cucumbers, cut into medium dice if cucumber skins are bitter, peel before dicing
  • 2 Tablespoons red onion, minced
  • 2 Tablespoons lime juice
  • 3 Tablespoons olive oil
  • 1 handful mint leaves, fresh, chopped
  • 1 handful parsley leaves, fresh, chopped
  • 1/2 teaspoon fresh ground pepper
  • 1/4 teaspoon salt
  • 1/4 cup feta cheese, crumbled optional

Instructions

  1. Combine watermelon, cucumber, red onion, lime juice, olive oil, mint, parsley, pepper, salt in a bowl, stir to combine. Taste and adjust seasonings as desired. Chill until ready to serve

  2. Serve as is or garnish with crumbled feta cheese .
